Black Bean Burger Recipe

Soooo...i've start a diet *sighs*. I hate dieting..but these pounds want lose themselves. I started yesterday and so far so good. I saw this recipe and thought it doesn't look to good...but what the heck i'm going to cook it. Oh my gravy...it's the bomb people. I will never eat a meat burger ever again. Here is the recipe:

Black Bean Burger
1 can of black beans, rinsed and drained
1/3 c of dried breadcrumbs
1 green onion chopped
1 tsp of minced garlic
1 egg
1/2 tsp of chili powder
1/2 tsp cumin

I put salt and a little tony's to this recipe. Put 2 tsp of canola oil and fry those suckers up. Get a wheat bun and add lettuce and some salso. Yummmoo

The Smell

Ok.....so my truck has been smelling like road kill for 2 days now!!! I finally got enough of the stink and started gutting, spraying, washing and at the end of the day... it still smelled like rotten feet. It was really ticking me off....so i started using what the good Lord gave me...my honker. Yep....I found the source....a rotten Easter egg squished between the seats. I think I will go hurl now......

Tomorrow I'm Wearing Black

Tomorrow my baby girl turns "6" *sniffs*. Where did the time go?!?! I blinked one eye and she she's all grown up. What happen to the girl that played with pappaw's safety glasses and ear plugs? Most importantly..Why does pappaw have ear plugs and safety glasses in his bedroom?!?!

Canning Jelly


Does the word canning scare you? Does it make you wan't to crawl in a corner and suck your thumb? I'm telling you right now...it is not as scary as it may appear. I started making jelly last summer and it's soooo easy! All you have to do is get a box of Sure-Jell and go by the directions. These are a list of the things you will need: Ball jars, Lids, Sure-Jell, lots and lots of sugar, and your fruit you have picked and labored over. All you do is cook out all your juice from your fruit. Once you've boil your juice you are going to have to strain it really good. I usually strain my fruit through a towel placed in a strainer. After you think you have all the gunk out of your juice you start boiling it and just go by your Sure-Jell instruction. Make sure you boil all your jars and lids before cooking. You want to keep your tops hot till you place them on your jar. When you've poored your juice and placed the lids on let them set till lids start popping. Hearing lids popping is the best sound in the world! It is all worth the time and effort! Once you do it the first time its like riding a bike...you'll never forget it. Enjoy!

Cowboy Cupcakes


I found this photo in some old files and thought I would share it. I made these last year for the Wild Horse Ministry annual trail ride. It is so simply and so cute! You just get a chocolate cake mix and make your cupcakes as normal (I use Duncan Hines because I find it's so moist). After you bake them you let them cool. You can top them with any icing you want to use. I make a homemade icing that you can find on the Wilton website. I use the really large tips for decorating (They give you some helpful tips at www.wilton.com). Then you melt some white blocked chocolate..I usually use white and just drop some food coloring in it (not too much). Next..you draw boots with a marker or use a template to make your boots on the wax paper. Then you poor your chocolate on the wax paper and form your boots with a spoon or knife. Stick in freezer and cool. After you remove them from the freezer they should pop right on off. Hope you enjoy!

Homemade Cresent Roll Recipe

I made these yummy things for Thanksgiving this year. They were so delicious!!!

Cresent Roll Recipe ( Makes 2 cookie sheets, 24 rolls to each pan)

Ingredients:

4 T. Yeast
1/2 + 2 T. of warm water
6 Eggs
1 C. Oil
1 C. Sugar
2 C. of warm milk
10-11 C. Flour
2 T. Salt

First you mix your yeast and warm water and allow to sit for 10 minutes. You can warm your milk by just sticking it in the microwave (don't over heat).

Next...mix together very well in seperate bowl your eggs, oil, and sugar. Add your egg mixture and warm milk to yeast mixture. Mix until combined.

Then you start adding your flour. Add 1 cup of flour at a time until combined. Continue to mix/knead for 5 minutes. Allow to raise 2-3 hours in warm area.

Seperate into 6 balls. Roll out each ball until the size of a dinner plate, then cut and roll. I find it easier to roll on a lightly greased area. Let rise again on cookie sheet and pop them into oven on 350 until golden brown. Enjoy!
